Every table should have a herb posy instead of flowers, and emphasis on fresh seasonable fruit, vegetables and salads, dressed with edible flowers and fresh herbs should prevail.

Produce from The Healing Gardens own walled garden should provide the main focus for the dishes on offer, and should incorporate ingredients and herbs which are effective in treating ailments and disease.  Menu consideration should be given to:
